These healthy mushroom recipes satisfy just about every craving imaginable. When it comes to adding flavor, these little nuggets of fungi are our secret weapon. Our cabinets are pretty much always stocked with bags of dried shiitakes (in case of flavor emergencies), especially now that we know there’s an easier way to rehydrate them. It’s true that functional mushrooms like maitake and shiitake have been found to increase energy and lower stress, but they’re also straight up delicious, lending a rich umami flavor to vegan broths, substantial salads, and the grain bowl of our dreams.
